San Domenico Blend
The San Domenico Blend is obtained from a mixture of a variety of oils: Leccino, Coratina, Nocellare of the Bellice and Nociara, all from the trees of the Masseria San Domenico in order to make this unique flavour.
Variety: San Domenico blend
Colour: Yellow-green, clear
Bouquet: Balanced intensity, fine with vegetal hints reminiscent of artichoke and green almond
Taste: Plant notes immediately in relief, EVO oil of excellent structure and with a remarkable intensity, balanced and fine with a good harmony between spicy and bitter
Foods to pair: Bruschetta, pinzimonio, vegetables, legume soups, broad bean puree, stewed fish soups, sea bass in salt crust, baked meat and fish, Mediterranean cuisine in general.
Its contribution consists mainly of moderate aroma and flavour but it enhances the taste of every food to which it is added!
Coratina
Colour: Golden green, clear
Bouquet: Great olfactory intensity, fine quality with strong herbal notes (leaf and cut grass) and vegetables (artichoke and tomato).
Taste: Strong and decisive aroma; powerful and intense oil with fruity after taste, remarkable bitterish presence with a great and persistent spiciness. Structured and intense.
Food pairing: Dishes with great structure, baked pasta (parmigiana), risotto, grilled red and braised meat, grilled tuna and sword fish, succulent soups.
Our Coratina variety has been awarded for 2022 and 2023 with the mention of quality among the best EVO oils in Italy.
Leccino
Colour: Golden yellow with green reflections
Bouquet: Medium intensity, fine, the bouquet has note of aromatic herbes (basil), almond and artichokes hints.
Taste: Notes of dried fruit (hazelnut and pine nut), spring vegetables flavour with light spicy aftertaste. Good structure and persistence
Food pairing: Fresh salads, vegetables soups, steamed crustaceans, creamed cod fish, cooked vegetables to sweet trend, any pasta with fish, fresh milk products, fish and meet carpaccio, poultry and bruschetta.
Has a quite strong taste, it adds flavour and aroma to the dish
Nociara
Colour: Green with golden yellow reflections
Bouquet: Rich and complex aromatic composition, strong olfactory intensity, excellent quality. Intense aromas of almond with herbal hints.
Taste: Vegetable tone reminiscent of green tomato, chicory and almond, balanced sensations of bitter and spicy. Medium intense and structured, excellent quality with a harmonious after taste.
Food pairing: Mixed salads, cooked and raw vegetables, soups, dried broad beans puree, grilled and baked fishes, mediterranean cuisine in general.
It increases the flavor of the dish and strongly accentuates its complexity.
Ogliarola
Colour: Golden yellow.
Bouquets: Quite intense flavour; fine, light fruity, fresh cut grass, wildflowers and fresh almond notes.
Taste: Good roundness considered the bitterness typical of this variety; the spiceness is well balanced with a touch of sapidity. Quite intense and moderately structured.
Food pairing: Fresh salads, pinzimonio, steamed vegetables, veggies soup, steamed and raw fishes such as seafood cuisine.
Releases aroma and flavour in a moderate way. Accentuates the taste of food without covering it.

Flowering and monitoring: each step of the olive growth (flowering, fruit set and veraison) is monitored weekly with strict controls by an agronomist.

Milling: Cold extraction in less than 24h from the harvest with crusher at low speeds (process temperature is 25°)
Storage and Bottling: storage in steel silos in the absence of oxygen at a controlled temperature of 24° and subsequent bottling in aluminum containers to ensure and preserve the fragrance and quality.

The main nucleus of Masseria San Domenico dates back to the fifteenth century and consists of a watchtower belonging to the Knights of Malta who had their main base in Puglia in the nearby port of S. Stefano. The Tower still intact with its manholes and flues stands proud of its historic role in the center of the residential area that gradually was transforming until the eighteenth century becoming one of the most important fortified farms in the area.
Working in the olive groves of the Masseria is hard work but satisfying, it requires dedication and tenacity, but the ultimate gratification is remarkable. Enjoying the star climate, sun exposure and the smell of the worked soil is always a special feeling. As human beings, we have a responsibility to do what we can to preserve the beauty and value of our land!
